This year’s edition, which took place from August 25-30, was held in the Suwalki region of Poland. After a night in Warsaw and dinner at Modest Amaro’s restaurant Atelier Amaro, the chefs took a six-hour bus ride to Jaczno Lodge in Suwalki, located near the Lithuanian border. It’s an area that isn’t exactly known for its cuisine, and more than one chef wondered what they would find there. “I don’t know,” said Mauro Colagreco, of Mirazur, on the Côte de Azur. “Will there be anything to eat?”
