- Camarones a la Limeoa: sautéed shrimp in garlic, butter and white wine.
- Tamales.
- Aji de Galina: chicken in a sauce of chillies, bread, peanuts and yellow peppers
- Quinotto: quinoa, shrimp, mushrooms and cheese
